Happy Sunday!! This week’s menu is going to look a little different for me but I’m going to give you some of my favorites still. I’m headed to Austin on Thursday for the wedding festivities but I’ll tell you what I would eat if I were here…
Monday – Since my Monday’s are low carb I’m going with SkinnyTaste Chili. This is easy to freeze for later or to use the next day for lunch. I’m going to use Turkey instead of beef because it’s what I have and I don’t want to go back to the grocery store.
Tuesday – I’m going to have leftover Chili and then do Korean Beef bowls for dinner. Philip really likes the korean beef and then I want to just take the beef and substitute it into this recipe of Spicy Pork Brussels. I recommend following the Spicy Pork Brussels recipe and adding rice if you aren’t trying to go low carb. Using the Korean Beef will just work better for us because Philip does not love brussels so he can add rice and then I’ll use shredded brussels and frozen caulirice. The egg on top sounds SO yummy.
Wednesday – Chicken Cordon Bleu This recipe is seriously my favorite! It’s really not even as complicated as it sounds. I’ve used any kind of white cheese and it’s always turned out well. I also just use Garlic & Herb breadcrumbs mixed with a little parmesan. One thing to do is salt and pepper the hell out of the chicken cutlets before doing anything!!
Thursday– Cobb Salad. I’m not including a recipe on this because it’s meant to be a nice easy dinner. I chop romaine and whatever toppings I want (bacon, tomatoes, roasted corn, bleu cheese and avocado). As far as the chicken goes you can do rotisserie chicken or my go to “taco” tenders. I use this Old El Paso Chicken Taco seasoning. CLean your tenders and mix in a bowl with a packet of seasoning (1 packet per pound of chicken) and a little olive oil. You really just want enough EVOO to help spread the seasoning around. I let this marinate in the fridge for 30min-1hr. After that I burn the tenders on a skillet then chop and toss them on a salad. It’s so easy and honestly a great way to meal prep chicken. If you need a recipe, this one is really good.
Friday – Pizza Night!! The recipe for this grilled pizza dough is SO easy and much lighter on the tummy. I make ours and only divide it into 2 instead of into 4. That’s usually enough especially if you add a salad. We set our oven to 450 – 500 and let it get VERY hot with a baking sheet in it. If you have a pizza brick that’s great too. Otherwise let that baking sheet heat up and add your dough. We cook it pretty much to crispness and then add toppings. We like thin crust pizza so this method works well for us and it’s a fun date night activity with some wine.
